Arrabiata Sauce. My all-time favourite

Tonights tea is meatballs with this gorgeous spicy sauce

Ingredients

  • Low calorie cooking spray
  • 2 fat red chillies, deseeded and finely chopped
  • 1 onion, peeled and finely chopped
  • 2 garlic cloves,peeled and crushed
  • 400g passata
  • 200ml vegetable stock
  • Salt and freshly ground black pepper

Method

  1. Spray a pan with low calorie cooking spray and sauté the red chillies, onion and garlic over a high heat for 5 minutes until softened.
  2. Add the passata and stock, bring to the boil, cover and simmer gently for 15-20 minutes until reduced slightly and thickened. Season to taste and serve. Easy!

I'm not a breakfast person but enjoy cereal as a TV snack. The thing is I tend to fill my bowl and not measure.
Today I have painstakingly weighed 35g of my cereal so that when I do feel the need for a nibble, I can just grab a bag and go

@PeanutHottie Cheesecake sounds gorgeous

Burger In A Bowl



This really is tasty 🍴🍴🍴
This recipe is delicious topped with a Healthy Extra serving of cheese of your choice.
Serves 4
Syns Per Serving : Extra Easy and Original - 1 Syn
Ingredients
• Fry Light
• 500gm extra lean minced beef
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• freshly ground black pepper
• 1 iceberg lettuce, roughly shredded
• pickled sliced gherkins
• 1 small red onion, finely chopped
• cherry tomatoes
For the SW Super Sauce
• 3 level tbsp lighter than light mayonnaise (1.5 Syns)
• 5tbsp fat free fromage frais
• 1 level tbsp American-style mustard (1.5 Syns)
• 2tbsp tomato puree
• 2tsp white wine vinegar
• 1/2tsp garlic salt
• 1/4tsp onion granules
• 1/4tsp sweet smoked paprika
Method
1. Spray a large, heavy-based non-stick frying pan with Fry Light and place over a high heat. Add the beef, onion and garlic and stir-fry for 6-7 minutes or until the beef is cooked through and the onions have softened. Season well.
2. Meanwhile, put all the SW super sauce ingredients in a bowl with 4 tablespoons of water and whisk until well combined.
3. Mix together the lettuce, gherkins, onions and tomatoes and divide between four wide bowls. Spoon the beef mixture on top, drizzle over the SW super sauce and serve hot.

Mini Bacon Quiche

I had some bacon that needed using up so I whipped up six mini quiches.
I frylighted, that's not a real word but I hope you understand, a pan, added the fatless bacon, some chopped onion and cooked through.
In my blender I blitzed 1 tub of quark with 4 eggs and added some dried oregano.
Then mixed all the ingredients together and popped them in bun cases.
A slice of tomato on each quiche and a tiny bit of very low fat cheese and cooked for 25 minutes at 190

Pulled Beef Ragu

Serves 6
Ready in 6 hours



800g Beef Shin or Brisket
2 roughly chopped Carrots
2 Bay Leafs
4 Squashed Garlic Cloves
250ml Red Wine = 1 1/2 syns per serving
2tbsp Marmite
4 tbsp Tomato Puree
2tsp Cinnamon
Sprinkle of Celery Salt

Put all of the ingredients into a slow cooker with 200ml of water.
Leave to cook for 6 hours.
Remove beef and shred into strands.
Meanwhile, put the sauce in a plan on the hob and let it reduce until the thickness you prefer.
Add the shredded beef and serve with fresh vegetable's or pasta of your choice.

Courgette, Red Onion, Garlic & Chilli Quiche

I've not made a quiche for a while so thought I'd make one today.
My creation is a Slimming World SP one.

Ingredients

1 Courgette which I spiralized
1 Red Onion diced
Garlic Frylight
Chopped Whole Chilli
1/2 pot of Quark
6 Eggs
Tomato to top

Fry the courgette, onion and chilli in the frylight for 10 minutes.
Whisk together the quark and eggs
Place the cooked vegetables in a frylighted tin (I used garlic again)
Then pour over the egg mixture and top with the sliced tomato
Cook at 160 for 35 minutes.

Happy Bunny

Well I've been to this weeks weigh in and am chuffed to bits. Since last Tuesday I've lost 6lb in weight. I've never Lost large amounts in a week and this is the most.
I am totally in shock. I'm going to stay with the SP plan but maybe just for 5 out of 7 days as I did miss pasta and potato by day 5.

I go every week to my local Slimming World group and really do enjoy every minute of class. Last week we were introduced to a new plan Extra Easy SP .
I have been on this plan since last weeks class and this afternoon is weigh in!! Let's see if its worked. I have missed my carbs but only towards the end of my week, other than that I have really enjoyed my meals and haven't gone hungry.

Filling and Fab


Today's lunch is my first meal on the New Slimming World plan. I'm determined to use this plan for a week as recommended and, who knows I may stay on it and be super skinny by my birthday. 
I made the coleslaw using quark and lemon juice and its not too bad at all. Watch this space for more healthy meals.

Cauliflower Rice

Ingredients

Process

  1. Rinse cauliflower under cool water and pat dry.
  2. Using a cheese grater, grate the cauliflower to a coarse texture (approximately the size of rice grains). Using a food processor to pulse the cauliflower to desired texture works as well.
  3. Heat the frylight
  4. Sauté the onion and garlic for 3–4 minutes, or until the onion is relatively translucent.
  5. Add in the cauliflower rice and continue to sauté for 4–5 minutes.
  6. Season with salt and pepper, and serve.

My Spiralizer is the way forward

I am a bit of a gadget fiend and discovered this Spiralizer and love it!!

Yesterday I had a play with it and fancified up a gherkin, pickled egg, carrot & cucumber for my salad


Today I am going to make Zoodles to have with my homemade bolognaise. I might even have a go at some curly fries.
Here are some of the things I cannot wait to try:

  • Zoodles – Zucchini noodles
  • Poodles – Parsnip noodles
  • Swoodles – Sweet Potato Noodles
  • Toodles – Turnip noodles
  • Coodles – Carrot Noodles
  • Sqoodles – Squash noodles
  • Boodles – Broccoli Stem noodles (peel stem first)

Turkey & Gammon Pie

I've had a go at pie making today using some of the cooked turkey and gammon from over Christmas.

Ingredients. Only 4 1/2 syns per serving
Cooked turkey & gammon diced
1 diced carrot
1 diced onion
Dried tarragon
Some of the Cauliflower Gravy I had left.
Butter Frylight
3 sheets of filo pastry
Serves 4


Put the meat into a pie dish... Boil up the carrot and onion, once soft drain and keep a little water.
Put the vegetables over the meat
Mix the gravy, tarragon and a little of the veg water together so it is the right thickness for your pie
Pour the gravy into the meat and stir through
Put a filo sheet over the filling and spray with butter frylight
Do this for all  3 sheets.
Pop into the oven on 190 for 25 minutes

It was very tasty served with Slimming World chips & peas

Waste not..Want not..

My late Mum, never wasted food and neither do I.
Today's lunch was Cold Ham from yesterdays meal.. Bubble & Squeak from the remaining cooked vegetables served with pickled red cabbage, baked beans and a egg fried in frylight.

Diet Coke Gammon Joint


Today we had Diet Coke Gammon for lunch. So simple yet so tasty.
The Gammon Joint was 3kg and all I did was put it in  tray, covered it with a can of diet coke.
Rubbed a little bit of honey into the skin and covered loosely in foil in the oven.( I never tasted the honey as I took the fat off mine before serving)
190c for 2 hours then took the foil off for 45 mins.
I had it with vegetables which I cooked extra of yesterday.

Last January I joined Slimming World.
 I've been a member before at various groups throughout the North of England but this group is the only one I have stuck to going to every week and staying to class.
Why? Because Angie, the Consultant, really makes everyone feel welcome. Even if we've had a bad week on the scales Angie never judges.
The other ladies and gents who go to class are also the friendliest I have ever known.
As soon as you walk through the door the knowledge and cooking ideas flow.
From the 6th of January 2015 Angie will be running 3 classes each Tuesday, the times will be 3.30...5.30 & 7.30.
I can highly recommend Angie's classes for fabulous weight losses,help,advice and to make new friends too.

Scan Bran Ferrero Rocher

A friend made me some of the Scan Bran Fererro Rocher as a gift. Until today I had never tried them. I can highly recommend them as a 1 syn treat.

Scan Bran Ferrero Rocher -Syns: 26 Syns for 30, 1 Syn each


Ingredients:
8 Scan Bran
4 level tbsp Nutella
1 level tbsp Golden Syrup
1 tbsp water

Method:

  1. Place the Scan Bran into a food processor and reduce to crumbs.
  2. Mix all ingredients into the crumbled Scan Bran and divide up into petit four cases.
This should make 30 'Rochers'.
